Rotate Proxmox, VM, and PostgreSQL passwords

Rotate passwords across our Proxmox instance, VMs, and database server. Just good practice to keep rotating them on a semi-frequent basis.

We store passwords in a password manager, can give details to whoever picks this up. Change the passwords and then update the password manager as well.
