What's changed

• New simslim on <udid> --no-reboot: slims the current boot session in place, with no reboot. Each label gets launchctl disable + launchctl bootout, so the daemon stops now and cannot respawn. This is the only way to slim iOS 17.x / 18.3, whose launchd keeps overrides in memory only; on iOS 18.5+ it is simply the faster path and the state persists as well. status now warns when the runtime cannot persist the slim state and status --json gains a persistent field (#42, closes #38).
• New simslim watch: polls the device sets and slims each simulator no-reboot the moment it boots, then leaves it alone. Built for xcodebuild parallel-testing clones, which are created stock and torn down when the run ends. Takes the same --profile/--except/--keep selection as on (#43). Thanks @enumcase!
• GUI: the simulator row checkbox now has a larger hit target (#40). Thanks @dinsen!
• README hero image replaced with a demo video (#39).
