docs: add macOS Docker installation instructions

Changes
- Added a new "Installing Docker on macOS (Apple Silicon / Intel)" section to the Requirements section in doc/self-hosting.md
- Provides two installation options:
- Docker Desktop (recommended) - with specific guidance for Apple Silicon vs Intel Macs
- Docker Engine via Homebrew/Colima (advanced users)
- Added notes about multi-arch image support for Apple Silicon
- Added troubleshooting tip for "docker compose plugin not found" errors
Context
Issue #4346 reported that the self-hosting installation fails on macOS because Docker is missing, and requested clear Docker setup instructions for macOS Apple Silicon users. This documentation update addresses that gap.
Testing
- Documentation only change - no code changes
- Verified the instructions are accurate for current Docker Desktop and Colima versions
- Links point to official Docker documentation
